Moist and spiced carrot cake bars topped with rich cream cheese frosting—easy to make and perfect for any occasion.

Ingredients

1 cup grated carrots

1/2 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1/3 cup oil or applesauce

1 tsp vanilla extract

3/4 cup all-purpose flour

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp nutmeg

Pinch of salt

1/2 cup cream cheese (softened)

1/4 cup butter

1 cup powdered sugar

Instructions

1. Preheat oven to 350°F (175°C). Grease or line an 8×8 pan.

2. In a bowl, mix grated carrots, brown sugar, white sugar, eggs, oil, and vanilla.

3. In another bowl, combine flour, baking powder, soda, cinnamon, nutmeg, and salt.

4. Fold dry ingredients into the wet mix. Do not overmix.

5. Pour into the pan and bake for 25–30 minutes.

6. Cool completely. Beat cream cheese and butter until smooth.

7. Add powdered sugar and whip until fluffy.

8. Spread frosting on cooled bars, slice, and serve.

Notes

Add walnuts or raisins for extra texture.

Store in fridge for up to 5 days.

Freeze frosted or unfrosted bars for up to 3 months.
