- 1 lb lean ground beef (80/20)
- 1 medium sweet onion, diced
- 8 oz fresh mushrooms (cremini or button), sliced
- 2 cloves garlic, minced
- 2 cups beef broth (low-sodium)
- 1 cup full-fat sour cream (or Greek yogurt)
- 8 oz egg noodles (or preferred pasta)
- 2 tbsp all-purpose flour
- Salt & pepper to taste
- 1 tbsp dried parsley for garnish
Instructions
- Gather all your ingredients. Chop the onions and slice the mushrooms.
- In a large skillet, heat some oil over medium heat. Add the diced onions and sauté until they become translucent, around 3-4 minutes.
- Add the sliced mushrooms to the pan. Cook them until they turn golden brown.
- Add the ground beef to the skillet. Cook until the beef is thoroughly browned. Season with salt and pepper to taste.
- Sprinkle the flour over the beef mixture and stir to coat everything evenly.
- Gradually pour in the beef broth while stirring constantly. Let it simmer for about 5-7 minutes until the mixture thickens to your desired consistency.
- Reduce the heat to low and stir in the sour cream until fully combined. Taste and adjust seasoning if necessary.
- Serve the stroganoff hot over cooked egg noodles. Garnish with parsley for a fresh touch.
Notes
Best served with garlic bread, steamed vegetables, or a side salad. Can be easily stored in airtight containers.
