Ingredients
1½ lbs ground beef
1 cup breadcrumbs
1 onion, finely chopped
2 garlic cloves, minced
1 egg
½ cup milk
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
—Mashed Potatoes—
2 lbs potatoes, peeled & cubed
½ cup milk
4 tbsp butter
Salt & pepper to taste
—Topping—
2 cups shredded cheddar cheese
2 tbsp parsley
Instructions
1. Preheat oven to 375°F. Mix ground beef, breadcrumbs, onion, garlic, egg, milk, ketchup, Worcestershire, salt, and pepper. Press into greased baking dish.
2. Bake 40–45 minutes.
3. Meanwhile, boil potatoes until tender. Drain and mash with milk, butter, salt, and pepper.
4. Spread mashed potatoes over baked meatloaf. Top with cheddar cheese.
5. Bake another 10–15 minutes until cheese melts and bubbles.
6. Rest 5 minutes. Garnish with parsley and serve.
Notes
Swap ground beef with turkey or pork.
Add peas or carrots for more nutrition.
Freeze portions up to 2 months; reheat covered with foil.
