Description

Mexican White Trash Casserole is a bold and cheesy comfort food loaded with chicken, refried beans, cheese, and crushed chips—perfect for busy weeknights or potlucks.


Ingredients

Scale

2 cups shredded cooked chicken

1 can Rotel (tomatoes and green chilies)

1 can refried beans

1/2 cup sour cream

1/2 cup cream of chicken or mushroom soup

1 packet taco seasoning

2 cups shredded cheddar or Mexican blend cheese

3 cups crushed tortilla chips or Doritos

Optional: sliced green onions, jalapenos, olives


Instructions

1. Preheat oven to 375°F.

2. Mix chicken, Rotel, beans, sour cream, soup, and taco seasoning in a bowl.

3. Layer half the crushed chips in a 9×13 baking dish.

4. Spread half the chicken mixture over chips.

5. Add 1 cup cheese, then repeat layers.

6. Top with remaining cheese and extra chips.

7. Bake for 25–30 minutes until bubbly and golden.

8. Let cool slightly, garnish, and serve.

Notes

Use Greek yogurt to lighten it up.

Great for freezing – wrap well after baking.

Sub ground beef or turkey for chicken.
